Herby Eggs with Spinach & Rye

Ingredients

  • 2 large eggs
  • A handful of spinach
  • 1 tbsp chopped herbs (parsley or dill)
  • 1 tbsp butter
  • 2 slices rye toast

Instructions

  1. Melt the butter in a pan.
  2. Add spinach and wilt briefly.
  3. Crack in the eggs and scramble gently.
  4. Stir through herbs and spoon over rye toast.
