Herby Eggs with Spinach & Rye

Ingredients
- 2 large eggs
- A handful of spinach
- 1 tbsp chopped herbs (parsley or dill)
- 1 tbsp butter
- 2 slices rye toast
Instructions
- Melt the butter in a pan.
- Add spinach and wilt briefly.
- Crack in the eggs and scramble gently.
- Stir through herbs and spoon over rye toast.
