Lemon Ricotta Pancakes

Ingredients

  • 150 g ricotta
  • 1 lemon, zest
  • 1 egg
  • 120 ml milk
  • 100 g flour
  • 1 tsp baking powder

Instructions

  1. Whisk ricotta, egg, milk and zest.
  2. Fold in flour and baking powder.
  3. Fry small rounds until lightly coloured.
