Mediterranean Couscous Bowl

Ingredients
- 120 g couscous
- 200 ml hot stock
- 1 handful cherry tomatoes, halved
- 1 small cucumber, diced
- 50 g feta cheese, crumbled
- Olive oil, lemon juice, salt
Instructions
- Place couscous in a bowl and pour over hot stock.
- Cover and leave 5 minutes, then fluff with a fork.
- Add tomatoes, cucumber and feta.
- Dress with olive oil and lemon juice.
