Mediterranean Couscous Bowl

Ingredients

  • 120 g couscous
  • 200 ml hot stock
  • 1 handful cherry tomatoes, halved
  • 1 small cucumber, diced
  • 50 g feta cheese, crumbled
  • Olive oil, lemon juice, salt

Instructions

  1. Place couscous in a bowl and pour over hot stock.
  2. Cover and leave 5 minutes, then fluff with a fork.
  3. Add tomatoes, cucumber and feta.
  4. Dress with olive oil and lemon juice.
