Northern Gingerbread (Modern Healthy Version)

Ingredients
- Wholemeal Flour
- Rye Flour
- Rolled Oats
- Bicarbonate of Soda
- Ground Ginger
- Ground Cinnamon
- Sea Salt
- Black Treacle
- Honey
- Unsalted Butter
- Eggs
- Natural Yoghurt
Instructions
- Heat the oven to 160°C (fan) and line a 20 × 20 cm tin with baking parchment.
- In a large bowl mix the wholemeal flour, rye flour, oats, bicarbonate of soda, ginger, cinnamon and salt.
- Gently warm the treacle, honey and butter in a pan until just melted.
- Whisk the eggs and yoghurt in a jug, then pour in the warm treacle mixture.
- Stir the wet ingredients into the dry until smooth and glossy.
- Pour into the tin and bake for 30–35 minutes, or until risen and springy.
- Cool completely to let the ginger develop its flavour.
Notes
A softer, more wholesome twist on northern gingerbread. The blend of rye and oats gives a lovely chew, while the treacle and honey keep it rich without being too sweet. It improves after a day or two in a tin.
